Gluten free puff pastry with spinach and salmon

Today I had a totally fast and uncomplicated lunch: Puff pastry with salmon and spinach. And it tasted just as good as it sounds. 


What you need for it: 

1 roll of Schär puff pastry

Spinach according to taste

Salmon fillets as many as you like

half a lemon

1 egg yolk 

salt pepper, nutmeg


And it's that simple:

Preheat the oven to 180 degrees with top/bottom heat and in the meantime roll out the puff pastry on a baking tray. Score the dough lengthwise on both sides so that you can fold the sides over the salmon later. Then place the spinach and salmon fillets in the middle, season and cover with lemon slices. Fold the dough over and put in the oven for 25 minutes.

The time is estimated, you should only check from time to time that the puff pastry does not get too dark.
